This salad is super simple and easy to make with basic ingredients! Great for lunch or as a side dish with dinner. Broccoli is always a great alternative to the usual salad greens! A little bit of feta tastes great in salad too… 🙂
Serves 2 Ingredients: - 1 large head of broccoli - 1 red pepper - 12 cherry tomatoes - 1 lemon - 3 tbsp extra- virgin olive oil - 2 tbsp natural yoghurt - sea salt and ground black pepper - 20 gr sunflower seeds - Optional: a little slice of feta cheese Method: Cut the florets from the broccoli or break them into bite-sized pieces. Trim and cut the stalk in half, then finely slice and place all the broccoli into a serving bowl - this way you don't waste anything of the broccoli! Halve, de-seed and finely slice the pepper. Cut the tomatoes in half. Place these in the bowl with the broccoli. Cut the lemon in half, squeeze the juice into a jam jar, or bowl if you don't have one. Make sure you catch the pips. Add the olive oil and yoghurt in the jar with a pinch of salt and pepper. Put the lid securely on the jar and shake well. If in a bowl, mix it with well with a fork. Have a taste and see whether you think it needs a bit more lemon juice, oil or yoghurt. Drizzle the dressing over the salad. Sprinkle over the sunflower seeds and serve straight away.
