Homemade soup is so much better for you than buying it in the supermarket – soup from a pot can contain a lot of salt and even sugar! This soup is super simple to make. I like to cook a few portions and freeze it, so whenever I come home late or am feeling too lazy to make dinner… I just warm it up! (in a pan, not microwave 😉 ) x
Serves 2 Ingredients: 15 cherry tomatoes 1 red pepper 1 onion 2 gloves of garlic handful of basil 400ml vegetable stock (depends how full you like the soup) tbsp olive oil Method: Cut the tomatoes in half, chop the red pepper, garlic and onion into little pieces. Add a tablespoon of olive oil in a frying pan and add the tomatoes, red pepper, onion and garlic. Fry for about 10min before adding the basil for another 5 minutes. When the vegetables are all soft, blend them in a blender or food processor until smooth. Put the vegetables in a big pan and add the vegetable stock. Add more if you like the soup thinner or less if you like a fuller soup. Bring to boil, than simmer for about 10min. Serve straight away.
