This recipe is so simple and delicious!! It’s full of omega-3s, healthy fatty acids, rich in protein and low in sugar. A perfect start of your day. Make sure you buy organic, small or medium eggs. I love to season the avocado egg with chilli flakes or chives, but feel free to use any topping you like! Enjoy x 🙂
Serves 1 Ingredients: 2 small eggs 1 avocado Method: Preheat the oven on 200C. Slice the avocado's in half and take out the pit. Scoop about 2 tablespoons of flesh out of the centre of the avocado, just enough so the egg will fit in. Place the avocado's in a small baking dish. Make sure they fit tightly. I used a cupcake baking tray so the avocado's don't fall over. Crack an egg in each avocado half. Try your best to crack the yolk in first, then let the egg white spill in to fill up the rest of the shell. Place in the oven for about 15-20 min, depending on the size of your eggs and avocado's. Just make sure the egg white has enough time to set. Remove from the oven and season with pepper and salt or whatever toppings you prefer!
