This bean stew is so simple and quick to make. It’s lovely for cold winter nights when you are too lazy to cook for hours. If you feel like having meat it’s lovely to add some lean mince before adding all the remaining ingredients.
You can eat this on it’s own or add some brown rice to make it extra filling!
Serves 4 Ingredients: 1 jar of sun-dried tomatoes 2 x 400g tins of chopped tomatoes 2 x 400g of butter beans (or cannellini beans) 1 tbsp. of tahini 1 tsp. of ground chilli 3 cloves of garlic salt and pepper Method: Pour the beans into a colander, rinse them with water and then drain them before adding them in a large frying pan. Next drain the sun-dried tomatoes in the colander and add them to the pan with the tins of tomatoes, tahini, crushed garlic, chilli, salt and pepper. Allow the pan to heat for a few minutes until everything is nice and hot, then serve with salad, rice or enjoy on it's own :)
