Do you love wraps and tacos but trying to cut out the carbs this week? Make these amazing lettuce wraps instead – so light and yummy. If you’re a vegetarian or vegan, it’s also nice to replace the beef with Quorn. It will still taste great! I topped these wraps with peanuts and carrots but you can replace these with cashews for lower salt. Lovely for dinner and they still taste great for lunch the next day! x
Makes about 8 wraps Ingredients: 400g lean beef mince 1 tbsp. olive oil 1 cup of onions, roughly chopped 4 cloves of garlic, diced 1-inch piece of ginger, diced 3/4 cup of water chestnuts, roughly chopped 2 tbsp. hoisin sauce 2 tbsp. soy sauce Romaine heart lettuce or iceberg Optional toppings: 1 shredded carrot 1 cup of roughly chopped peanuts toasted sesame seeds chopped spring onions Method: Heath a large pan and add the mince - if it's looking dry add some olive oil. Cook until it's no longer pink, break apart with a wooden spoon. Season with salt and pepper. Set aside on a separate plate when finished. In the same pan add 1 tablespoon of olive oil and cook the onions, garlic and ginger for 3-4 minutes. Add the meat and chestnuts into the pan. Stir in the hoisin and soya sauce and cook everything together for a few minutes. To serve, place the meat mixture in the lettuce cups and top with shredded carrots, peanuts, sesame seeds, spring onions and extra hoisin sauce if you like! Add another lettuce leaf on top so you can eat it with your hands ;-) !
