Super quick courgette side salad: this salad is so quick and easy to make, you’ll end up eating it all the time! I love this as a side dish, or it’s great for lunch when you add extra protein like chicken, salmon or even an avocado! It’s best eaten as soon as you’ve dressed the courgette but, if you want to prepare it in advance, mix up the dressing separately ready to add to the courgette just before eating…x
Serves 1 Ingredients: - 1 courgette - a handful of pumpkin seeds - 2 tbsp. extra virgin olive oil - 2 tsp. balsamic vinegar - salt and pepper Method: Toast the pumpkin seeds in a dry frying pan over a medium heat, shaking the pan every minute or so until the seeds are golden and start to jump around the pan. Meanwhile wash the courgette, wipe it dry, hold onto the stalk end and grate. Top the courgette with your seeds and drizzle over the extra virgin oil, balsamic vinegar and sprinkle with salt and pepper. That's it!!
