Do you love pizza but – like me – you’re trying to cut out the carbs and stay healthy this year? This pizza, made of cauliflower instead of flour, is a great alternative. I know it sounds strange but, trust me, it’s delicious and you won’t feel bloated afterwards. It takes a little longer than the usual, but it’s totally guilt-free!x
Ingredients for 1 pizza: - 1 big cauliflower (the biggest you can find!) - 1 egg - 1 tablespoon dried oregano - pepper and salt - olive oil - optional: a handful of cheese of choice Toppings Whatever you like on your pizza! I chose these ingredients: - 5 tablespoon tomato paste - 4 mushrooms - 1/2 courgette - 1/2 pepper - 1/2 onion - chilli powder - handful grated pizza cheese Method: Preheat the oven to 180C. Cut the cauliflower into pieces so it all fits into your food-processor. Pulse until it's a crumbly texture. Spread the cauliflower on a big sheet of baking paper on an oven tray. Bake for 25 minutes, make sure you mix it every 5-10minutes. While the cauliflower is in the oven, you have time to cut all your veggies, ready to go on top. When ready take the crumbly cauliflower mixture out of the oven and let it cool down for 15 minutes. Put the cauliflower in a tea towel and try and squeeze out all the moisture. Add the mixture in a big bowl and add the egg, oregano, handful of cheese (optional), pinch of salt and pepper and mix really well. Spread the mixture evenly on your oven tray covered with baking paper. I used a spoon to make it really smooth and thin. Bake for 25 minutes again, it should start looking light brown. Take out of the oven, add your tomato sauce, toppings and cheese and pop back into the oven again for 20 minutes. Spread a bit of olive oil on the sides of the pizza. It will start looking a lot darker than the usual pizza as it's cauliflower.
