Peas on toast – the new avocado on toast!! 😉
Since I eat avocado on rye bread almost every day for lunch I wanted to try something different. This recipe is super easy and so light and delicious. It’s a great alternative to the usual avocado and also very good for you! I love poaching an egg on top too. Bon apetite! x
Serves 2 Ingredients: - 200g frozen peas - tbsp. olive oil - 2 tbsp. grated parmesan cheese - 1/2 lemon zest - small handful mint leaves, shredded or finely chopped - 4 slices of sourdough or rye bread, toasted. - 2 poached eggs (optional) Method: Put the peas in a bowl and cover with boiling water straight from the kettle. Leave to stand for 2-3 minutes; drain. Roughly mash with a potato masher, then stir through the oil, cheese, lemon zest, mint and then season. Pile onto the toasted bread and top with the egg(s).
