I always love to find healthier alternatives to my favourite snacks. When I lived in New York, I developed a slight addiction to peanut butter cups… They are just so good, I love the salty taste with sweet chocolate. This recipe has salted cashew butter instead of peanut butter and it’s incredible. It’s not too difficult to make, and they only contain natural ingredients – yay! Just be careful not to eat them all in once 😉
Serves 8-10 Ingredients: - 1 cup of dates (make sure they are soft, if not soak them in boiling water for about 30min) - 100g raw chocolate, or normal dark chocolate - 2 tsp. of salt - 2 tbsp. cashew butter (you can always make your own by blending cashews till creamy) - water - crushed cashew nuts - paper cases (smallest ones you can find!) Method: Place the chocolate in a bain-marie and melt gently until it becomes liquid. Spoon a little of the chocolate into the base of your paper cases and place these in the freezer to set To make the caramel, place the dates, cashew butter and salt into a food processor and blend until smooth. Add water if needed. Add a little of the caramel into the centre of each cup and cover with another layer of chocolate. I like to sprinkle to top with some crushed cashews for some added crunch too. Return these to the freezer for around 1 hour to set.
