I love overnight oats – they’re perfect for when you don’t have much time to prepare breakfast in the morning and great to take with you while travelling. Super easy to make the night before, especially when you have a jar to take with you the next day! For this recipe I used peanut butter, as I’m a big fan (!!), but feel free to use any other nut butter, like almond or cashew. Add the leftover banana on top and a teaspoon of creamy peanut butter for extra yummy flavours. If you’re vegan you can also leave out the Greek yogurt and add more almond milk… Enjoy! x
Serves 2 (or 1 very hungry person!!) Wet Ingredients: - 1/2 medium banana, I like to save the other half for on top - 2 tablespoons peanut-butter, creamy - 1/4 Greek yogurt, plain - 3/4 cup almond milk, unsweetened - 1 tablespoon of honey (optional) Dry Ingredients: - 1 cup of oats - 1 tablespoon of chia seeds - 1 teaspoon of cinnamon Method: First, mash the half banana in a large bowl. Then add the rest of the wet ingredients and mix until smooth. Add in dry ingredients and mix again. Place in the refrigerator, covered, for at least 2 hours, preferably overnight. Serve cold.
