This cake is amazing. No dairy, gluten or refined sugars! And also… no baking!! Great showstopper for a dinner party. Also you can store it in your fridge for over a week. It has layered lemon cashew cream and spicy, nutty carrot cake. Full of flavours and textures. This is definitely a winner!! It looks like a lot of ingredients, but they are all staples in a healthy kitchen, and it’s so worth it 😉 PS. don’t forget to soak the cashews overnight !
Ingredients: lemon cashew frosting - 2 cups cashews, soaked overnight - 1/2 cup fresh lemon juice - 1/4 cup maple syrup - 1 tbsp. vanilla - 1/2 or 1cup coconut oil Method for frosting: Blend together the cashews, lemon juice, maple syrup, vanilla and a bit of water if needed till smooth. With the blender running, slowly add the coconut oil. Let set in the fridge for easy spreading while making the carrot cake layer. Ingredients: Carrot cake layer - 1 cup almonds - 1 cup cashews - 2 cups shredded coconut - 1 cup ground almonds - 2 large carrots, peeled and grated - 1 cup currants - 2 tsp. cinnamon - 2 tsp. nutmeg - 1 tsp. vanilla - 1 tbsp. lemon zest - 1/2 cup dates - 1/4 cup maple syrup - 1/4 cup coconut oil Method for cake: In the food processor, pulse the almonds, cashews, and half the coconut to a crumble. Transfer to a large mixing bowl. In the large bowl, add the ground almonds, remaining coconut, grated carrot, currants, cinnamon, nutmeg, vanilla and lemon zest to the nut crumble. In the food processor, pulse the dates, maple syrup and coconut oil. Add the wet mixture to the dry mixture in the large bowl and mix together. Line a 20cm spring-form cake tin with baking paper. Remove the cashew cream from the fridge and begin to layer your cake, starting with your carrot cake mix. smooth with the back of a spoon and add a layer of cashew cream. Smooth again and place in the freezer for 15 minutes before adding the second layer. Remove from freezer and add another layer. Continue until you have used all your carrot cake and cashew cream. I only used 2 layers. Replace to the freezer to set. Enjoy!!!!
