Granola is so delicious, the only problem -it usually contains so much sugar as a can of coca cola!! This recipe has no refined sugars and is so yummy. At first this recipe was supposed to be for healthy flapjacks, but they turned out to be so crumbly I turned them into granola. It taste amazing on it’s own or with a dollop of Greek yogurt.
Ingredients - 300g rolled oats - 30g flaked almonds - 30g sunflower seeds - 150g honey - 1tsp. ground cinnamon - sea salt - 2 rice cakes, broken into little pieces - 1 large handful of dried goji berries - 4tbsp. coconut oil Method: Preheat the oven to 180C and line a baking tray with baking paper, greased with a little coconut oil. Spread the oats, almonds and sunflower seeds out on the large baking tray and cook in the oven for 8-10 minutes until slightly golden, then remove from the oven to cool. Meanwhile, add the honey, salt, cinnamon, coconut oil and 2 tbsp. of water in a bowl and mix well. Add the oats, nuts, seeds and rice cakes to the bowl and combine thoroughly. Transfer the mixture back to the baking tray and bake for about 15-20 minutes until slightly golden. Let it cool down and add the goji berries, store in a airtight Tupperware or jar.
