I love Easter, it’s the best excuse to eat chocolate all weekend !! But there are so many holidays this time of year and most celebrations involve a lot of sugary food. That’s why I made these Easter nests treats. They are vegan, (unless you use the chocolate eggs), only natural ingredients and so easy to make as it doesn’t involve any baking !! I used Cadbury Mini Eggs to make them look like real nests, but you can also just shape them into cookies as a yummy snack. Happy Easter !
8 Nests Ingredients: - 1/2 cup creamy peanut butter - 1/4 cup maple syrup or honey - 1/4 cup coconut oil measured in solid state - 2 tbsp. unsweetened cocoa powder - 1/4 tsp. sea salt - 1 tsp. vanilla - 1 cup oats - 1/4 cup shredded coconut Method: Line a baking sheet with wax paper. Set aside Combine peanut butter, honey, salt and coconut oil in a saucepan and heat until melted and well combined. Stir in vanilla and cocao powder. Add the oats and mix well. Now stir in the coconut until completely combined. Drop 1 tablespoon portions of mixture onto your prepared baking sheet. Press into shape of nests (or cookies!) Continue until you've used all your mixture. Let cool in the refrigerator or freezer until hardened. Top with your favourite eggs. Serve cool or at room temperature. Store in an airtight container in the fridge.
