Lemon Coconut Chia Balls are a nutritious snack that taste both refreshing and sweet at the same time. With only 5 ingredients and no baking they are easy to make ! Great as a snack or even breakfast.
Keep them stored in the fridge for up to 1 week or 3 months in the freezer.
Ingredients for 12 balls: -150 grams (1cup) raw cashew nuts -175 grams (1cup) pitted dates -45 grams (3/4cup) unsweetened desiccated coconut -40 grams (1/4cup) chia seeds -zest from 1 lemon -2 tablespoon lemon juice Method: Add the cashew nuts to a food processor and pulse a few times until chopped. Now add the dates, 30 gram of the coconut, chia seeds and process until well combined. When it is mixed well, add the lemon zest and juice and mix until all the ingredients come together to form a dough. With slightly damp hands, roll half a tablespoon of the mixture into balls, then roll each ball in the remaining coconut. That's it ! All ready to eat straight away.
